meat cuts diagramWell, I’ve been working, worrying and thinking of ways to reach everyone that is interested in the naturally grown and nurtured lamb and goat product. We will continue providing the USDA cuts that are so popular and starting in the fall we are adding something to it.

Buy a whole lamb or goat and take your pick about how it’s processed and the cuts you want. To give you a guideline to work with, I’ve done the calculations on a live weight of 80 pounds. The animal could weigh 83 pounds or 62 pounds and the price is adjusted accordingly.

  • Whole live animal 80 pounds is $160.00 and you can self process. Or…
  • Whole live animal processed under my supervision $230.00.

You can specify whatever cuts you want. For example: Neck Piece whole/cubed, Boneless Shoulder Roast, Rib/Loin Chops or Racks, Leg Roast or Kebobs, Shanks whole/cubed, all bones and organs. Any pieces can be ground if you prefer.

  • Buying USDA-certified cuts individually from us would run about $285.00 to 310.00 depending on the pieces chosen.
