Variety meats, also referred to as exotic meats or offal, include the inner organs of lamb and goat. As an advocate of sustainable ranching, we encourage the use of the whole animal and always keep packages of the various edible organs on hand.
I’ve used a recipe with olive oil, garlic and mint for marinade on liver. Cut into small size pieces and brown for a delicious appetizer. There are numerous recipes online for the mountain oysters, kidney, heart and spleen. Be adventurous.
